I like both, they are both good in their own way. They both also have their downsides.
One thing I really liked about Pac/Mosley was the entire crew was completely silent during the ring entrances. I wish HBO would do that. I don't want to hear Lampley talking about his thoughts when Bernard Hopkins is epically walking out to "My Way" or when Floyd is coming out, or Pac to Karate kid, etc. The Showtime crew did a great job in that regard and made it feel more like you were there in a way.

Yeah, that's the only thing I dislike about the HBO commentators. Everything else from Production value, the music they use, to organizing the event is far superior, they do all the small things right to get you pumped up. When I watch a HBO PPV I get super excited especially when they do that epic boxing intro and Lampley does "It's time for our main event" graphic. It gets my heart pumping. With Showtime, it didn't give me that big fight feel at all. Don't know why either, it was the samething with Cotto/Mayorga and Hopkins/Pascal 1.
HBO has flaws but it's more appealing than Showtime. Plus the 360 episodes for the SM Tournament are good but Pacquiao/Mosley fightcamp 360 were kind of lame. So I say 24/7 > 360.
