There really isn't a reason. They simply have less weight classes and boxing has more. They did it with boxing due to the international scene. A lot of boxers come from incredibly poor countries. Because of that, you are going to get smaller fighters.
Also, sanctioning organizations wanted to make more money. More champions, more sanctioning fees.
MMA's weight classes came after the fact. They set the limits they wanted to set and that they thought would best protect the fighters.
Sadly, I don't think we should. I know that people would like to go back to the original 8 or to slim it down a bit. However, I think, historically, it could end up taking away from certain boxers. If you combined 108 and 112, for example, the best fighters historically (depending on who you ask) would now be thrown up in the air.
However, if the sport was given a clean up and a database that would actually look at the best fighters from "now defunct" division, I'd be all for it. Then, these fighters could be signaled out as the best and could get their proper respect. I just know that isn't going to happen.
