In his prime Roy Jones was very good at figuring out his opponents style and dominating them thereafter. In his prime he pretty much dominated everyone he fought, Aside from a couple of fighters like Montell Griffin and Eric Harding who were very aukward fighters and also undefeated at the time.
Right now there arent many I can think of, Maybe Wladimir Klitschko. I think he is simular to Jones was in that he spends the first couple of rounds to figure out his opponents and see what he needs to do to win the fight.
