In the amateurs we use 10 oz gloves. I've seen plenty of knockouts and knockdowns with 10 oz and 12 oz amateur gloves, which are made to absorb impact. I've been hit hard and hurt with 10 oz amateur gloves.

You can still crack with 10s. The extra padding is more to protect the hands, not the chin, IMO.

Probably 10. To get 8oz Mosley would need to be holding some cards in negotiations
