Gonna go with the last 5 years:

              Barrera vs Naseem Hamed
              Trinidad vs Vargas
              Rahman vs Lewis I
              Rahman vs Lewis II
              Sanders vs Younger Klitchko
Sanders vs Older Klitchko (I always get their first names mixed up)
Hoya vs Vargas (though I was rooting for Vargas)
              Arce vs Hussein
              All Morales fights
              All Pacquiao fights
              All Gatti fights

The Rahman vs Lewis fights were not that great IMO because in each fight both guys just caught each other with a lucky good shot, and both have questionable chins but massive punching power. Outside the devastating knockouts they were pretty boring fights.

But pretty much all Gatti fights are really good like you said.

I just like how smug Lewis looked in the first fight. He was barely winning against a determined Rahman until he got caught. However, in the rematch, Lewis was on target. This was not boring at all as he was connecting a lot of his powershots against the flailing arms of Rahman (what the hell was that about anyway?) and then ONE TWO! Rahman is laid out on the Don King crown.

I was happy as well to see Lewis get dropped after acting so smug against Rahman in the first fight. I never was a fan of Lewis though.
