Modern- i would say Wonjongkam, Hasegawa, John, Donaire, and Kameda.
Old school- i would say Fighting Harada who beat Jofre, caballero, and medal and lost a 3rd weight class by one point in a close featherweight title bout. Galaxy, Pancho Villa, Flash Elorde are up there to name a few.
The only asian fighters that i can think of as of right now that are even worth mentioning are:

Nonito Donaire
Brian Viloria
Marvin Sonsona
Hozumi Hasegawa
Koki Kameda
and of course, Amir Khan.
Out of all of them, i would say Chris John is the second best, but who knows what the future holds for the likes of these other fighters like Donaire and Hasegawa or Khan.
