Usyk's main assets are his speed, reflexes, and stamina. As these attributes deteriorate with age, Fury is in no hurry to make that fight, given that his advantages (size/reach/power) will remain relatively unchanged.

Don't know about the duck thing, but his team have this "Fury fears Usyk" notion, which is silly. They accepted the 70/30 split still thinking Fury fears Usyk and thought it was a bluff. So now they're trying to put it back to 50/50 by moving the goal post like the date thing.
