Jones and GSP fought better competition. Fedor went unbeaten for longer and did it while at a size disadvantage a lot of the time. Anderson is no4 for me, but theres no real consensus on who the GOAT is.
As for the boxing thing, i'm not arguing with the possibility that he would have succeeded in boxing, i'm saying that hes obviously not the ONLY person to ever enter MMA who even had the latent potential to do it. Combat sports have tiny talent pools, its not rocket science, lots of fighters in various disciplines could have succeeded in others if they'd trained that instead.
