The only conventional animal I try to avoid is swine. Beef is the ****, I won't eat it raw like you and mangler though. I got no love for Pittsburgh style steaks.
Medium rare is the **** Bully. Maybe all places don't do it right, but it's gravy when cooked just right homey. Real talk.

beef raw or rare is excellent when prepared properly.
there's this vietnamese dish i always eat that is raw , thinly sliced beef. no cooking. it cooks in the marinade/sauce and the lime juice. delicious. great with beer.
