well, for the Japanese I know Guts Ishimatsu was very well known for his after fight pose, and he was a pretty good fighter too. won his fights by using 'guts', quite surprising. won a title at lightweight.
theres the Fighting Harada, dont know much about him but I think he was well respected.
Hiroshi Kobayashi is one of the more accomplished fighters in Japanese history, had a long run at 130lbs.

as for Koreans, In-Chul Baek and Chong Pal-Park won titles at Super Middleweight I believe, Pal-Park is one of the most accomplished 168lbers of all time. thats all I can think of off the top of my head tho
