Most people don't just have gums.

Mouthpiece makes more sense. it's a piece to protects your MOUTH. Not just your gums.

Where do you live where most people have no gums? When you get punched your gums suffer the consequences by getting shredded torn up, the 'piece' acts as a shield.

A piece can be anything, Gum Shield is more specific.
