An upset of that magnitude seems like it would have warranted an immediate rematch, why did Douglas fight Evan Fields instead?

immediate rematch clause wasnt in the contract. at the time Holyfiled was the number 1 ranked contender, and don king worked out a deal for the newly signed champion (buster douglas) to defend against evander for the purse in the neighbourhood of 25 mill.
plus the beating looked so decisive i dont think king was in any hurry to place mike back in the ring with buster -

Tyson and King wanted the rematch badly. Holyfield was the mandatory contender though and Main Events got Steve Wynn to put up 20 million for Buster to fight Holy at his hotel. There were a lot of lawsuits and Buster had to pay King and a lot of others off to make it happen. Of course the rest is history, but all of the legal stress distracted Douglas and he came into the ring in pitiful condition that night and was easy pickings for Holyfield.Comment

Holyfield was the mandatory who already had a date set with Tyson for the summer, and it was only a week after (on Feb 17th) the Douglas/Tyson fight when the orders came down from both the WBA & IBF stating that Douglas must make his first defense against Holyfield.Comment
