Now before you answer. I know Castillo did beat Casamayor, but Casamayor's 3 losses could have also been wins.

Castillo, easy. He holds the head-to-head win, and I thought got the better of most of his fights. Just as you say Casamayor could be undefeated, you do have to do the same for Castillo. A lot of people believe he beat Mayweather the first time. He also was beating Corrales down in the first fight, before Corrales came back. I think the win over Stevie Johnston is a really good win as well.
