Kimbo is a bit too old to start a boxing career, in MMA he has a chance because there are some lesser strikers than him.
He will lose to wrestlers though, his promoters and managers will make sure of it that he won't run into one.

Anyway, the story goes that Kimbo was somewhat impressed by MMA fighters skills (he was beaten by one in a street fight) and wanted to get into it.
Bas Rutten told him he had potential and that's how he got started.

Kimbo seems to be very dedicated but it's not like he is going to be a UFC HW champion.
He could beat up some journeymen in Boxing just as well as he is beating up some cans in MMA.
