I can think of James Toney off the top of my head, started at 160 and won a title at 200 from Vasily Jirov.
Guillermo Jones started at 147, and was a serious contender in the cruiserweight division, but never got over the hump.

Roy started at 154 and won 160 title when to HW so I think he is lower than James Toney and it part of his legacy too
Ruiz can beat almost any heavyweight today because he is better technically than most of them but he isn't a KO puncher and has trouble with better boxers. Nady didn't allow him to slug so he didn't have much of a chance.
I think RJJ was favored to beat Ruiz if I remember correctly.
