I heard he throws 100 punches per round, I could be wrong though.

A bit less. By the end of his fight with Taylor, he had thrown less than 500 punches, by the 7th round. Averaged out, he wouldn't be on track to breack the 1,000 mark like Calzaghe did against Kessler, even with Joe tiring in the 12th round, and even losing it. So, I'd say he throws less. Though, it's based on averages as Pavlik has NEVER gone the distance in a 12 round fight.
