In the photos I've seen, at the weigh-in, and in the ring, Hopkins appeared slightly taller.

At the weigh in they looked pretty much the same height IMO, at press cons before the fight I thought Pavlik looked taller. In the fight, at some points Pavlik looked taller, sometimes they looked the same, and sometimes Hopkins looked taller to me. At worst they are the same height imo.

Yes, people change height depending on posture and movement.

That doesn't explain the apparent statement of weights on HBO of 172/185, versus the screen-shot of HBO saying 174/180 though. It's this one that's really puzzling me.

HBO didn't say that, did they? The only place I have heard say these weights in this link here,

Well, a few have said they stated 174/180 and evidence has been posted. Tunney says they also said 172/185 so were just awaiting evidence of that.

Hopkins had disadvantages in just about everything else.

There's no need to make up excuses, Hopkins was a huge (4 to 1) underdog before the fight and now it's as if everyone knew he would win easy.
