It's the new Android Operating System titled Android 4.1 Jelly Bean. It's pretty much a sooped up version of Android 4.0 Ice Cream Sandwich making it a lot better with cool new features and butter smooth fluidity.

I have no idea why they name their OS's after deserts lol. I guess it's to make them more distinguish from each other. Instead of just Android and then a number?

It will probably be a long wait. Android OS updates take a long time. I don't know how significant you'll be able to see a difference if Samsung does decide to give the GS3 the Jelly Bean update. They covered up the 4.0 ICE Cream Sandwich with their Samsung Touch Wiz user interface so it doesn't even look or feel like ICS 4.0
