The reason to lie about your age is so that when you're competing in youth competitions, you have an advantage, start impressing the right people, are more likely to get money put behind you, etc.
But Ortiz started his amateur career at such a late age that there would be no incentive to lie about his age. Pretending to be 25 when you're really 30 gives you no advantage. You're fighting the same people.
The advantage comes when you're 14 and you pretend to be 10 to fight younger kids.
Go look at amateur footage of Ortiz and he's clearly the age he claims.
