The human has a small but very sharp knife. The animal cannot be some tiny insect, that would be gay. Nothing smaller than a frog. No fish, sharks, jellyfish or anything that lives in water as the fight would take place in a large room with no windows.

As for an answer, maybe a bear. I guess a skilled hunter can kill one if he got sumthin bigger than a smallass knife, but as per the OP, he'd probably get torn apart.
