GGG was and is by far the best at 160 and has proven it for the last 5+ years, he is 36 now and just not ready to give up the throne, but he could lose soon, he is past prime, most other offensive fighters are long retired at 36. Everyone knows that a prime GGG would destroy the current 160lb division and even this old version is probably still good enough for 2-3 more.

It's really hard to say there's ever a last man standing, where does it start and end? unless it's a tournament containing the real best fighters.
Fighters are always at different stages of their careers and even if you're on top and retiring, there will always be a new fighter that everyone wants you to fight.
Boxing is always an ongoing thing. Even if all the top middleweights now fight each other, by the time that happens, someone else will be emerging.
