No everything else will continue to respawn...

they are still there in multiplayer though, where you can unlock more achievements.

Rockstar probably did it to show how the white man pretty much wiped out buffalo. I remember one mission the native american guy was saying how they will go extinct and the nutty professor was arguing saying they will only get stronger!

Yeah, the achievment is called manifest destiny.

The game's dope. If you like GTA then there is no reason why you won't like this. So much stuff to do.
