Thats why he wasnt just stopped by the kickboxer/thai type guys, but also submitted multiple times. That better understanding of the existencd of BJJ and of boxing has led Khabib to an impressive record and title against all types of styles.
That still doesn't change the fact that Khabib's entire game is built on getting a hold of you, with Khabib not really having much else if he can't get a hold of you, even with the knowledge.

It's a lot harder to check kicks in a boxing stance and much more painful when they land toward the side/back of the leg. there's a nerve that runs along there, and even a few well placed kicks can be debilitating. they wouldn't have to completely cripple him or anything, just disrupt his ability to transfer weight when punching/moving.

Uh, no., he'd get killed against any no retarded opponent. How could he do damage with his jab? How could he deter his opponent from grabbing him, throwing him around and elbowing him in the face, knees to the body etc.?

The referee doesn't jump in to 'save' you and reset the fight when you close the distance and grab someone, only illegal shots have the ref step in. Boxing is a sport, MMA is a closer simulation of a street fight / fight to the death

The leg is there, but if you looked at the top 100 145lb fighters in the country, easily the bottom 50 of those fighters would have issues with properly placing a leg kick of kicking with any real confidence.

A fight is still a fight, even with all of the extra tools available in MMA. Age and fitness aside, Paulie Malignaggi would walk into the 145lb division with arguably the best hands in MMA (Frankie Edgar has great boxing for MMA, made to look better with his use of the rest of his told); is an 8-9 fighter who's kind of confident in his kicks going to make the physical risk/commitment to land that shot.

Nate Diaz is built on great BJJ, really good boxing and reality good general grappling. He'll check the occasional leg kick, but that's his own style

Cant argue with that but because hes not as bad as some of the others from the older school, he can impose himself. Hes gotten a hold of everyone hes tried so far so lets see if Conor can change that. His stand up isnt elite for his sport by any means but hes developed a heavy jab and his stand up is at least respectable for MmA.

Again, you're assessing their abilities by how they perform against other mma fighters who know how to defend kicks and have the threat of shooting takedowns off kicks. Paulie doesn't have that experience or pose that threat. It's not that difficult to land kicks at range when you only have punches to worry about in return.

His hands would be a threat no doubt, but there's too many ways to smother that work, and he'd need to clear a lot of threats just to get into punching range. Mma fights aren't typically fought at boxing range unless you have 2 guys who are basically agreeing to do that...which not too many guys are gonna do with a pro boxer.

Nate diaz is a guy who fights more or less in a boxing stance, and he eats a lot of low kicks.
