Red - Run a boat is the phrase we use for cooking.

Pastelles never had it. You gonna have to reference something that you and i are both familiar with.

Thought you guys had pastelles. There are a lot of references about Caribbean Pastelles for christmas, etc. Especially from Trinidad. Like this site

I know of other dishes like Meat patties, jerk seasoned chicken, etc... But its you neck of the woods, you know the foods better than I. Maybe they are called something different?

Default Real Louisiana dishes

People love food from Louisiana, yet when outside the state these food items are seldom done properly. Etoufe (smothers) Jambalaya and Gumbo are all mercilessly destroyed... Is anyone interested in authentic Louisiana dishes? How to prepare them?

A real Gumbo for example? crawfish or shrimp etoufe that really is off the hook?

The Chinese really have it down. best wings I ever had come from San Francisco old ChinaTown. What they do is first, Dry the wings, dry dry dry... Try to get a decent flame and a wok is great, but any thin bottomed pan, Copper all the better, you want as much BTU's as you can get here.

Don't season the wings, (more on this later) don't oil the wok/pan... throw them in there and "chow" (kick them around the pan) as you start to get a little smell of the chicken, put in an oil with a good flashpoint...Peanut is divine, canoli, great, walnut oil expensive but good...stay away from olive oil.

Put in very little bits of oil and keep shaking, eventually the wings will start to brown a bit, probably in about ten minutes or so, at this point put in a little water, (maybe a 3rd cup and cover for about five minutes.

When you uncover, take both pieces out, the pieces the joint should turn easily, and come apart...this is when you can season, and if need be, brown some more.

Chinese style would be to add Green chiles, green onions and salt and chow (kick around) another few minutes or so...add enough oil that things don't stick...Be careful because wings have a lot of fat and can stick to the pan, spatula off if this happens. Oh and soy sauce will burn and smoke out. If you want to add, best to make a dipping sauce really (2 parts soy, garlic crushed, a pinch of sugar, 1 part rice vinegar, or chinese wine vinegar, and if you want to kick it up Chinese Hunan Black Bean sauce with chilies in oil.

Yu can also add hot sauce at this point, I would balance with a little sugar to carmalize... Any spice is alright. You add now because you want to cook the wings but not burn the spices.

Give this a try. Again: wings can be put in the deep fryer as well. They won't taste quite as fragrant but a lot better than the wet, slimy stuff most people pass off.

I've had some pretty damn delicious wet and juicy fried chicken. Popeye's for a mainstream example..

NOT fried chicken per se! Talking specifically about wings here. Wings are pieces of meat that have a lot of skin and bone, and a few nice nuggets of meat. The idea is to maximize the flavor and consistency of the fat, because one cannot enjoy the taste of a wing if the fat is wet, rubbery, or just not crisp.

Fried chicken is a whole nother animal! Popeyes varies considerably in my experience. The place in San Francisco where I have a place is very good, also in Louisiana Popeyes is a whole nother animal in a good way!

So what makes fried chicken good? Well first of all, most cultures have come upon the quandry of frying chicken in different ways than the antebellum South. To me really good fried chicken is taking breast meat, slicing it thin, maybe giving it a pounding and making snitzel. Cutlets that are floured, egged and breaded. Why is this so good? because the proportion of meat to crunchy stuff is almost one to one. No big hunks of dry meat to crunch.

But alas fried chicken is one of America's favorites and it can be done. Here are a couple of ways to do so:

1) pressure cook the chicken first. This is how Kentucky fried chicken gets the consistency people like in the old days (they have fallen quite a bit). You pressure cook for about 10 minutes, and dry chicken well, proceed as making normal fried chicken.

2) Cut the chicken breasts up....in 3 pieces or so, bone in. This makes it so the chicken pieces are not so thick they dry out and are tasteless.

3) Puerto Rican and Dominakins in Bodega restaurants will fry chicken pieces with just the skin. usually you get a half chicken. This cut works well. You have to have a big enough fryer but with a squeeze of lemon salt pepper, garlic salt, this is delicious.

They also broast the chicken, roast and grill... this broasting is also how a lot of restaurants in Paris serve half a chicken with frites. Just a nice simple meal with a lot of flavor... One of my favorites. The skin is crispy and the meat is juicy. Seasoning is not really so important, salt pepper maybe some garlic powder, a bit of butter and soy sauce.

4) People often make a very thick batter... Ok. I mean it does work...not very healthy though.

When I was a kid and went to free camps in East Harlem the councellors we had (this was the late 60's) would often have a wine flask which they would share with us kids... lol. Another favorite for the councellors was to buy a bucket of fried chicken. Yes... a bucket!! I don't understand it guys. It shouldhave given them an instant heart attack lol. These young guys would basically eat a bucket full, maybe give one of us a piece or so...

So there you go. the secret to good fried chicken is controlling the crust, trying to make the proportion of meat to crust close... and not drying the chicken out. The spices have little to do with it frankly though one can marinate the chicken... More on that later.

Default I will try to keep thread active... But it is easier if you guys comment occasionally

Just a heads up... I will try to keep this active. But it helps if you guys comment once in a while. There might be a better place for the thread, I will see if that is the case.
