Canelo punches were so fast to the point that GGG was so wary and gun shy because he didn't want to get hit with fast counter punches that he couldn't see.
From what I can tell Canelo doesn't have a lot of weight, steam or pop behind his punches at 160. All he has is a lot of speed and timing from being a smaller middleweight.
Since his hands are a lot lighter, therefore his punches are a lot faster and quicker than your typical middleweight. That was why he never hurt Golovkin because GGG saw his punches coming as they had very little to no weight or force behind them.
