          you can't have one specific because of the varied regions in the philippines.

          parang ganito...

          batchoy...ilo-ilo
          ginataan....bicol region
          pancit habhab....lucban quezon
          pakbet...ilocos region
          lechon...cebu

          pero sigurado ako eto na buong pilipinas at karamihan sa ilang parte ng mundo....

          based on my own experience. i heard plenty of stories about our adobo. tinalo pa nga nito ang peborit kong sinigang na baboy.

            Adobo recipe - one of the many varieties

            Adobong Pinoy Recipe

            The combination of pork, chicken and egg makes this the best adobo recipe in the world.

            Meal Type: Other
            Ethnicity: Philippine
            Holiday Category: N/A

            Preparation Time: 45 minutes to 1 hour

            Ingredients

            1 whole chicken chop into medium size serving
            1 kilo pork chop into medium size serving
            4 potatoes chop as the size of the pork
            2 whole onions chop ring style
            3 cloves garlic chop
            olive oil or butter unsalted
            5 tbsps soy sauce
            3 tbsps vinegar
            2 tbsp sugar (white)
            4 cups water
            salt and pepper to taste
            2 pcs bay leaf dried
            6 pcs whole chicken eggs

            Directions:
            Put oil in a pan, saute the onion and garlic put the chicken and pork in it followed by the soy sauce and 4 cups water.

            Let it simmer for about 30 mins then add the vinegar,sugar and bay leaf,salt and pepper to taste.

            Wait until the pork and chicken is tender.

            note: while waiting for the chicken and pork to be tender put the eggs (with shell whole )on the caserole and let it be cook for 30 mins, then drain and take out the shell of the eggs.

            When the pork and chicken is tender put the eggs (without shell) on it taste the sauce and let it simmer for another 5 mins when the sauce is already gone out and the texture of the sauce is thick.

            when i cook adobo...i never put sugar, potatoes and salt kasi yung toyo/soy sauce pa lang maalat na.

            my wife has a diffrent version too and they call it adobong biñan.
