I always try to hit the buffets, or if we get delivery I always get something extra spicy like king pow chicken or Mongolian beef with a side order of crab Rangoon

They are kind of bland for my taste.

I'm into the Koreanized Chinese dishes like Black noodle soup ( cha jang myun )
And spicy seafood noodle .. familiar with those?

Wife tells me that mainland Chinese foods should fit my taste bud though.
Hey, sorry for the late reply - I wasn't by a computer so I couldn't really post pictures. In general when non-native Chinese people think of Chinese food they think of Cantonese cuisine (Hong Kong) which is by far the most popular of all Chinese cuisines.

However, there's a lot of good stuff within Mainland China which I actually prefer. My favourite type is Sichuan cuisine which is typically spicy and the homeland of the hotpot. Northern Beijing style is also very spicy so I definitely recommend going to restaurants which specialise in these dishes.

My favourite dishes, which everyone should try out, are:

The aforementioned Hotpot - to those who don't know it's a type of pot filled with soup base which is traditionally very, very spicy (filled with chillies) where you can cook meats and seafood. The meats are thinly cut so they cook in seconds - it's amazing.

Water-cooked Beef (or fish, lamb etc) - this is AMAZING. It's a pot filled with chill oil, chillies and really juicy beef:

      Will post more later.

You clearly haven't tasted real Chinese food like Hotpot. If you did you wouldn't knock it.

Don't diss without trying bro. Don't be that guy

Ah I went to Guilin earlier this year and had this spicy mince meat on salted runner beans. Don't know what the dish was but best Sichuan food I've had in my life!

                  Edit: this stuff!!

If it's like a chinese takeout order ill get some lo mein, or wings and white rice, or something with garlic sauce and broccoli

But otherwise hotpot is where it's at
