1) Mexican - Love the flavors, spiciness, variety and creativity
2) Italian - Love the abundant and varied use of different types of cheeses
3) American- Love the simplicity and versatility
4) Chinese- Great flavors and combinations
5) Comfort - It may be considered American, but to me it deserves it's own category. My first and favorite boss was an African-American from Mississippi who cooked so many great and home-style dishes with lots of heart put into it. He was big fan of using many different spices and seasoning to complement the other ingredients he used for his dishes.
