I used K tape or a compression sleeve for my elbow while I had it. I worked on the jab mechanics a bunch with my coach and I don't have the issue anymore.

So I'm guessing it's the impact of hitting the bags, over extending or a combination of both. I did go from boxing once a week to 4 times so maybe that never helped either. In the 17 years I've used weights I've never had elbow problems.

Yeah I've had this issue on and off for 2 years. Mostly 1 elbow but a little in the other as well. I traced the original cause back to someone wrapping my arms up in a clinch and bending them in a weird way causing a hyper extension. Like you I also started training alot more around when it happened which probably slowed my recovery. I've tried weeks off, physio, etc, nothing has really fixed the problem but it does get better overall very slowly. It was so bad the 1st few months even shelling up and taking punches caused alot of pain. I've found my options are either to work through it or stop boxing for probably months (not really something I'm willing to do.) The best tips I can give you are to avoid missing with heavy punches, even if you hit there gloves or arms it shouldn't strain as much as hitting air. Try a elbow brace, I found it reduced pain but didn't really help with recovery for me. Also I've found exercising your muscles in the area to make them stronger helps alot (the main medical device I recieved from doctors/ physio) anything that dosent cause alot of pain, for me free weight curls seem to work best but I'm sure a combination of arm exercises is ideal. I'd say after about 2 years of this issue I'm about 90% recovered so if your like me you may be dealing with this a while.
