GGG isn't the only one who did this. I first saw margarito do it, later Bradley. Safe to say they all have a great chin... So it seems to be beneficial as it puts pressure around the jaw. However, it's pretty risky to do and it could cause a lot worse injuries. There are safer methods to work jaw and neck muscles, like wrapping a towel around a weight and biting down on the towell whilst lifting your head up and down.

My neck muscles and upper traps were sore for like 3 days after doing them. Very painful and nowhere near as easy as GGG makes them appear

Just tried it. Failed miserably, but, I feel like it's doable if you want it bad enough. I noticed I can do them if I relieve some of the load by keeping both of my hands on the floor. It's like someone spotting you, and you can alleviate the weight less and less until you don't need to have your hands on the floor to assist you.
You can also try some isometric holds with it. You can either use your hands to help also or do it like GGG if you're strong enough.
