Actually tried rat whilst backpacking in south east asia in the early 2000s. It is actually field mice. The mice only eat rice and other flora and is cleaner than pork. Pigs eat all sorts of rubbish including their own dead offspring and faeces yet people have no problem eating it. pork also is prone to have all sorts of parasites in its meat.
The mice taste like a mix of chicken and pork and is never dry. Has the perfect amount of fat and is extremely tender. Some mice get big as a small chicken believe it or not. had one grilled just like in the picture
