Surprised this hasn't been mentioned: The Rumble in the Jungle.
What if Foreman beat Ali? Foreman would have wins over two of the best fighters ever in Ali and Frazier.
Another one: Fight of the Century. What would have become of Frazier if Ali beat him? Maybe we would have never had the Thrilla in Manila.

George Foreman vs Muhammad Ali
Had Foreman defeated Ali, it would have relegated Ali to a pool with Norton and Frazier that would be clearly secondary and there would have been no dispute that Foreman was the best of the age having wiped out all the other big names.

I've been thinking this for a while, if Hagler got the decision over Leonard. I don't know what motivation Leonard will have to even fight for two titles on the same night, let alone a rematch with Hearns and a third fight with Duran.
For Hagler, does he really want a Hearns rematch, knowing Hearns will learn his lesson from their first fight, we might not see the Hitman get knockout by Iran Barkley.

I'd say Jeffries over Johnson (already mentioned by Scott). Had he won then we'd likely have a white and a coloured champion for several decades subsequently. Furthermore we'd never have had the notion of 'they never come back'.
