Both Holyfield and Tyson were fresher and better in 1991. I like matchups between fighters to be closer to their peaks. Just like the aforementioned Whitaker-Chavez and Chavez-Camacho. And for that matter, Leonard-Hagler a few years earlier, as well as Trinidad-Whitaker.

Hearns-McCallum at 154 in the mid 80s
Monzon-Hagler in 1978-79 (let's say Monzon fights a bit longer)
De La Hoya-Tszyu in 1997 (Tszyu instead of MAGO, or let's say they fight right after DLH-MAGO, Tszyu-Mas)
