I think Tim Witherspoon and Greg Page fought again in the late 90s, and Virgil Hill and Maske rematch when they were both past it.

Holmes and Weaver is arguably the longest, 21 years after.

That's the first fight I thought about as well as Holmes vs Bonecrusher Smith. Also, Julio Cesar Chavez and Frankie Randall re matched 10 years too late (94-2004) in a pointless rematch.
