Not sure whom I'd pick. Gregory/Muhammad could be really on, like he was when he won the LHW title from Marvin Johnson in a brilliant display of body punching. Toney was an on-and-off fighter as well. I tend to lean towards Toney with his brilliant counter punching would win as he'd find openings on Eddie, who left himself open as hell when he threw shots. Sometimes he'd stand there totally squared up with his hands totally out of position to defend himself.
I think it's appropriate that Eddie ended up training James Toney and Chad Dawson. Toney being someone who ate too much and had weight problems, and Dawson being a talented guy who needs to let his hands go more.
