    ULO AT BUNTOT NG TUNA
    ( Sinigang sa Miso )

    Ingridients:
    Ulo ng Tuna (cut into pieces)sprinkle some salt
    Buntot ng Tuna (also cut )sprinkle some salt
    Fresh Miso
    Tamarind mix in a pack
    Tomato ( 2 big pieces )
    Onions ( 1 big size)
    Kangkong o Bok Choy (bahala ka sa buhay mo)
    Raddish
    Ginger
    Eto na Gimik:
    Magpainit ng konting mantika sa kaldero, igisa ang ginger, onion at tis-kama. Tapos ibagsak ang Miso.After few minutes, Lagyan ng
    chicken broth o beef broth whatever you have para sa sabaw.Let boil until the tomato and onions are cooked.Add our ulo and buntot ng Tuna.Pag medyo luto na ang tuna then add the raddish which is cut into pieces. Tapos timplahan ng Tamarind mix tapos asinan. Pagkalipas ng ilang minuto, ibagsak ang kongkang hanggang maluto. Lasahan ayun sa kagustuhan tapos

      Binagoongang Baboy
      Ingredients
      2 lbs Pork loin, cut into small cube
      1/2 cup Balsamic vinegar
      1/2 cup Bagoong fish paste
      4 cloves Minced garlic
      8 Peppercorns

      Preparation
      Place pork cubes, peppercorns, and garlic in a medium sized, shallow container for 24 hours.
      Place the contents, along with the bagoong, an marinade into a large saucepan, or deep wok, then cook over medium heat for about 45 minutes, checking periodically to make sure the pork isn't burning, or too dry, if so, you may add a little water.

          PORK LIVER STEAK (WARNING: NOT FOR PEOPLE WITH HYPERTENSIONS)

          Ingredients:
          1/2 kilo pork liver (atay ng baboy)
          1 cup soysauce (toyo) note: di yung toyo sa ulo ha, ito yung toyo na nabibili sa tindahan
          6 pcs calamansi (2 lemons usually gamit ko pero kalamansi na lng para madaling bilhin)
          2 onion (1 sliced small and the other sliced ala onion ring)
          1 small garlic
          1/4 tbspoon ground pepper

          how to make:
          Marinate first the pork liver, here's the step...
          Pour the soy sauce in a clean bowl
          Squeeze the Calamansi or lemon and remove the seeds
          Add the ground pepper, the garlic and the small chopped onion
          Add the pork liver and mix well
          let stand for about an hour (the longer the marination process, the better)

          Cooking:
          Fry first the pork liver but make sure not to over cook it.
          Once through with frying, get another pan and cook the marinated sauce and bring it to boil.
          Add seasoning depending on your taste but the marinated sauce alone is good enough IMO, so no need to add any additional ingredients.
          When the sauce is already boiling, add the fried pork liver and let it boil for about 5 minutes (fire set to low only)
          When through with this process, remove from fire and add the "onion ring cut" onion...
          ayos na, pwede na kumain... you can also change the pork liver by a beef meat or pork meat kung di kayo mahilig sa atay ng baboy.....

            1 sibuyas
            3 kamatis
            2 kutsarang bagoong alamang
            1 tasang kalabasa
            1 taling sitaw (pinutol sa mga 2")
            1 ampalaya (pinutol sa 1")
            2 talong (hiniwa ng mga 1")
            1/2 tasang pinag pakuluan ng baboy


            pano lutuin:

            Igisa ang bawang, sibuyas, kamatis
            Ilagay ang baboy
            pag mejo mapula na ang baboy, ilagay ang bagoong, kalabasa, at tubig,
            pakuluin
            pag kulo ihalo ang mga gulay.
            hinaan ang apoy , pakuluin hangang mejo matuyo ang sabay..

              Bopis sa tagalog...

              Mga kailangan..
              6 na puso ng baboy..(dapat baga ng baboy o baka pero mas kumplekado)
              3 tasa ng suka
              20 piraso ng labuyong sili
              4 hanggan 5 na tasa ng gata ng niyog
              bawang at sibuyas
              kawali at blender (para huwag ng magtadtad)
              isang bugkos na kangkong


              una...
              ilaga ang anim na puso ng baboy (mga 30 minutes)

              next after ilaga...
              isalang isa-isa ang puso sa blender para magiling..pero saglit lang few seconds lang about 5 seconds only para huwag namang mapulbos ang puso.

              next after magiling ang mga puso...
              isalang sa kawali na may ginisang bawang at sibuyas ang mga giniling na puso at lagyan ng tatlong tasang suka...medium lang ang apoy. takpang ang kawali at hayaang matuyo ang suka. (10 to 15 minutes)

              next after halos tuyo na ang suka...
              ilagay ang apat na tasa ng gata na may halong mga hiniwang siling labuyo at takpan uli ang kawali. Medium ang apoy at hayaan lang uli hanggan sa matuyo naman ang gata ng niyog. (10 to 15 minutes)

              habang nakasalang ang bopis o kandinga sa kawali..tanggalin ang mga dahon ng kangkong. hindi natin kailangan ang mga dahon. katawan lang ng kangkong. pagkatapos ay hiwain ng malililiit ang kangkong. mga 1/4 ang haba bawat hiwa o maski humaba pa ng kaunti....pamparami ito sa bopis.

              next after halos tuyo na ang gata ng niyog....
              ihalo na ang kangkong sa kandiga. haluin ng sandok para masama ng husto ang mga kangkong. takpan ulit ang kawali at after 4 minutes na maluto ang kangkong patayin na ang apoy.

                Sisig


                Ingredients:

                1 1/2 kilo Pork head
                1/4 cup grilled liver (diced)
                2 small onions (minced)
                2 pieces red pepper (minced)
                1 head garlic (minced)
                6 pieces hot chili pepper (minced)
                2 tablespoons oil
                1 cup vinegar
                1 1/2 tablespoons liquid seasoning
                1 teaspoon black pepper
                1 teaspoon brown sugar
                1 cup beef stock


                Procedure:

                Grill pork head for to remove hair.
                Boil pork head until tender.
                Take out all the meat and dice.
                In a sauté pan, heat oil and sauté garlic, onion, red pepper, pork meat and liver.
                Season with liquid seasoning, black pepper, and brown sugar.
                Pour in beef stock and cook until meat is tender and starts to oil again. Add minced chili pepper last.
                Serve on a sizzling plate.

                    boil it for 5-10 mins.
