I have honestly only tried Well done but after this thread, next time I eat a steak it will be medium rare.

yes, most chefs at a nice enough restaurant will literally refuse to cook it that much

the higher quality cuts of beef that are properly aged should be served medium rare.

Medium rare has no blood. Juices yes but no blood so to speak. That an most places cook medium rare closer to medium.
