As soon as I seen the thread title I immediately thought of this and smiled when I saw it as the first film you mentioned!! Such a basic film as it's only shot in the office and a couple scenes in the bar but the lines Pacino, Lemmon and Harris come out with are amazing and it keeps you captivated!! Not to forget Alec Baldwin's awesome speech at the start and the amount of abuse Spacey gets throughout the film!!

billy wilder's films always have great dialogue specially sunset boulevard and some like it hot...

among recent ones, LOTR (specially those delivered by king theöden) deserve a shout...

ditto with cameron crowe's jerry maguire and say anything...
