It's because if you eat close to bed time the food will just be sitting in your stomach all night and won't get burned off so it will be stored in your body.
When I'm losing weight for fights, I'll have my last meal at about 5:30 before I head to the gym. Get home from the gym around 8:30 or 9:00 and have just a protein shake and water, then go to bed at 11.

It's a myth; total calorific intake and activity levels denote how much is layed down as fat, timing has nothing to do with it.
There's no scientific proof for it; it originated from a Swedish study on womens BMI's which was infact carried out rather badly.
