when did this random catchweights bs start?

The earliest I can think of is Lalonde-Leonard.

Can anyone help?

That was my first memory of a catch weight as well. Leonard-Hearns II was a catch weight as well

Unless I misunderstand something here there were tons of catchweights in the first decades of the 20th C.

As a guess, I would say that as soon as there were weight divisions there were catchweights.

According to a quick google search (http://sports.espn.go.com/sports/boxing/news/story?id=3238297) it goes back at least to Gans v. Walcott in 1904.
