I haven't really seen that many but I'd like to watch some recomended fights!
So if possible post a youtube link or even better an upload.

I'm gonna have to go with Pele vs Macaco

An old valetudo fight. I also liked Randleman vs Fedor alot, though.

for striking i'd hafta go with Lawler/Riley. unfortunately the best i could find for this was a highlight vid.

I have two,

1. Bonnar vs Griffin I,

Brawl from start to finish and did more for the sport in 15 minutes than everything that had come before it which is saying alot.

2.Hughes vs Trigg 2 from UFC 52.

For me solidified Hughe's return to the top of the WW division and showed why he is one of the best ever.

Bonnar vs. Griffin was a great fight! Those guys were good friends too..

That fight was to determine who got the UFC contract and Dana White made an exception and gave both men contracts because of how great and close the fight was.

From recent memory, two stand out:

The WEC Bantamweight Championship match between Yoshiro Maeda and Champion Miguel Angel Torres.

^ Great fight, but was unfortunately stopped on a cut.

A fight from the recent Dream 4 card between Darren 'BC' Uyenoyama and Hideo Tokoro...
