This is a very hard question because you could pick somebody who is the absolute best ever in his or her sport, like alexander karalin in wrestling or geri kasparov in chess.
It could be somebody who shows tremendous heart in everything he/she does and never gives up because being an athlete is more then just physical
you could also go for somebody like Paddy Doyle, this guy holds 121 national, european and world records in fitness and martial arts.
To give you an impression of his achievements i'll put down some of his records:
Pushups:
non-stop: 7,860
with a 50 lb [22.68 kg] plate weight on his back: 4,100
one-armed, 10 minutes: 400
Back pack running
1 mile (40 lb weight): 6:56 min
5 miles (56 lb weight): 36:49 min
10 miles (40 lb weight): 1:24 hrs
Burpees
15 min: 490
30 min: 930
1 hour: 1,850

First guy that came to my mind. He just had this aura, if he wanted to run 100m in the Olympics, I think he could have. He's just that one in a 100 million who has the most unbelievable athleticism and natural body you could ever dream of.

Bo Jackson would've been a killer in MMA. Greatest Athlete Eva. If he wouldn't have gotten injured he be hitting 60 or 70 bombs a year with Sosa and Bonds. He'd probably have well over 10,000 yards rushing. He was a machine, built for athletics.

He could run fast and jump far. That's the extent of his athletic ability. That's great for track and field. But I think greatest athlete ever? He couldn't even throw a baseball 60 feet 6 inches. 60+ year old presidents have done it. He tried multiple times and still didn't get the ball close.
