I would say the first Ortiz-Shamrock fight as well as anything with Vitor Belfort, Takanori Gomi, or Chuck Liddell...But I havent started getting really into MMA till recently but ive seen some of these fights and theyre great.

Watch any of Anderson Silvas fights, especially in the UFC. You will be a fan of the guy in no time. My fav fight of his is the destruction of Rich Franklin in the reamatch.

I would say to watch like UFC 1 to around UFC 20 or so. That way you can see the sport evolve from style-vs-style to true MMA like you see today.
