From what I hear, but make no mistake jealousy has alot to do with it.

Vargas always hates everyone he fights. I guess he wants to make it seem like he's fighting to get revenge against someone that somehow did him wrong. He's a drama queen. He is a pretty good fighter though.

I heard that Vargas used to look up to DLH until DLH did something that upset Vargas. I heard like he ignored Fernando or something and was arrogant.

The beef was probably all about money and fame. Vargas didn't have close to what De la Hoya had and thus this sparked a beef in Vargas to prove that he was just as good. Any self confident boxer would approach a fight this way. It just happened that De La Hoya has more pure boxing skills than Vargas. Vargas has a lot of heart and went out banging but just didn't have enough.
