I was thinking of buying a weighted vest and was wondering is it possible to do clap pushups, jump squats, plyometric pushups in them ok without causing injury. Also what other exercises can be done in them? will they help with my punching power at all or is it just for overall strength/ strength endurance

Weighted vest are great for strength/power development and conditioning. You can use a vest for power BUT it must be the right size. Power is about fast movement and explosion, so if you get one that's too heavy and you move slow or semi slow, you're not devloping power.
Weighted vests are great for chin ups, push ups, pull ups, inverted rows, any strength exercise.
For conditioning you can jump rope with one on, run, move in the ring, perform your bag work with it etc.
