i never thought that adobo was from the filipinas this is the seasoning that it has to be on any of my dishes.


BUT probably u guys adobo is different right because in wikipedia theres was alot of different things combine in PR the adobo is different.


what kind of condiments do u guys put on a adobo.??

Adobo is basically composed of vinegar and soy sauce. I believe I cooked it a few times before. Cook meat (preferably pork or chicken) with vinegar and lotsa garlic.....then put soy sauce.

There's this other variety called "Adobo sa Gata"......which is basically the same way but coconut juice is added (and raw papaya).

in every halk a kilo of chicken or pork,

2 tbsp oyster sauce
3 tbsp soy sauce (you can add more)
2 tbsp of brown sugar
1 cup water
10 gloves of garlic
black pepper (lots of it)
and bay leaves

you can add an oyster sauce with it... heres mine:

in every halk a kilo of chicken or pork,

2 tbsp oyster sauce
3 tbsp soy sauce (you can add more)
2 tbsp of brown sugar
1 cup water
10 gloves of garlic
black pepper (lots of it)
and bay leaves

The most basic ingredient for adobo is vinegar. If it doesnt have it then its more of a stew or a kaldereta etc.

My dad makes the best adobo no one can copy it, it sort of a dried version hardly had any sauce left, but its juicy inside the meat. He uses vinegar from the Ilocos region. Everytime he visits my house it will be the only thing everybody would request him to do.

everything is dry by the way the juice of the meat makes the taste batter with the adobo.

Palma, dont forget the vinegar, i forgot to post it in my menu... one of the most important thing when your cooking an adobo... if you put a cup of water, put some 1/4 cup of vinegar, but not to much, dont want our cooking taste so sour...

remember that this menu is your guide, you can add more or less with the oyster sauce and soy sauce according to your taste...

hey chups, some other recipe, instead of vinegar they put some pineapple juice... i havent taste it yet but others said its more delicious...
now if you are going to use pineapple, surely you wont be needing them brown sugar :D

btw, id like to try the recipe you posted though. i used to cook my adobo dry, the ones we called "adobong matanda". pretty much like chups version with lots of garlic ...

Aside from adobo, Pinoys also have Menudo, I know in Puerto Rico Menudo is a singing group but is it also food there??? I think Mexicans have menudo but I am not sure...

The Mexicans have menudo and it is good. It's different from our menudo.

Not true. D2 sa NY ung mga single friends ko they can cook. Ako lang ang hindi marunong. One time nag pakulo ako ng tubig nasunog pa! Kaya nakikikain nalang ako sa kanila!

our adobo is wayyy different from they adobo but the word adobo came from the filipinas.

no...there is no such thing but menudo in PR means alots of coins in a sentence in PR u say I have a lot of coins=yo tengo muchos menudos.

We used to catch them when I was young. My dad would skin them and my mom would make adobo (legs) and the rest she would make some sort of soup. yung adobo was not bad ( taste like chicken) pero yung soup di ko trip.

1/2 Kilo Pork 1 by 1 inches
1 whole Chicken cut to 14 pcs
3 cups Vinegar
2 cups soy sauce
20 gloves of garlic
black pepper ( powder , durog)
black pepper ( whole , buo)
and bay leaves ( 7 pcs )


* Just mix everything up. Bay leaves at the top and boil it. Turn the heat to low as soon as it boils. mix it occasionallly.

You're not supposed to mix until it boils though, right? The vinegar curdles the sauce. I think I'll try that, is this dry adobo o me sabaw?

do u guys put ur adobo is something else that is not meat???Well we don't put adobo on anything bro but we cook a lot of adobos. Man I mean we can make a lot of adobo dishes like adobong pusit ( squid adobo) or adobong kangkong ( a vegetable adobo). Here is adobong kangkong recipe

INGREDIENTS:
2 pounds kangkong or spinach
1/2 cup vegetable or corn oil
1 tablespoon lemon or lime juice
freshly ground pepper to taste
1/2 tablespoon finely minced garlic
3 tablespoons soy sauce
1/2 tablespoon salt




Wash and sort kangkong or spinach. Separate leaves and cut stems into 1-inch lengths. Saute the garlic in oil, and when it is golden brown, add the kangkong, lemon or lime juice, soy sauce and salt. Cover and bring to a boil. Add freshly ground pepper to taste. Serve hot.

your first question threw me off, that's why i had to clarify... now you got me all curious about this adobo spice... lol. what is it? like a dry rub you put in meat or like curry spice you put in everything?

Mahanap nga minsan at masubukan.

Nung lingo tol nag adobo ko ng isang kilong baboy damo. Pinakuluan ko muna ng tatlong oras sa uling na kalan bago ko sinahugan ng toyo at suka at maraming sili. Amputa parang corned beef ang labas haha!

baboy damo? 3 hours? mas makunat ba laman?Actually bata pa yung baboy damo kaya hindi makunat pero yung balat ang kunat pa rin. 3 hours lang kasi napag tripan kong palambutin ng husto. Nung nilalaga ko sya e sinalpakan ko ng maraming bawang, sibuyas, pamintang buo at dinik*** na luya at after three hours ko tinimplahan ng sili toyo at suka. Ang sarap tol, iba ba yung himaymay ng laman nya sa ordinaryong baboy kaya nasabi kong parang corned beef kasi nga parang himaymay ng corned beef. Di bale pag nagluto ako ng ganun ulit e kunan ko ng litrato.

Ok, I think adobo is the most overrated Filipino food. On the other hand, sisig is underrated. It's my favorite. :)
