So I visited my parents' house the other night. My aunt who lives there too, is from Pampanga. My mother's brother was there too and he's from Batangas.

My uncle made his Batangas style Adobo. My aunt from Pampanga said it tasted more like Bistek Tagalog and not so much like real adobo (which I had also made). She said mine is the REAL adobo.

My mom defended my uncle by criticizing my adobo - "Dagdagan mo lang ng dugo, Dinoguan yan!" She doesn't like the extra sauce I usually make with my adobo. :D

My aunt from Pampanga made Pinaksew na Bangus. But my uncle from Batangas said it tasted no different from Sinigang na Bangus. Maputi lang ang sabaw.

HAHAHA! The only people that enjoyed dinner without complaint that night was my father and my wife! Masarap daw lahat, mayabang lang daw kami! Hehehe! It's true, I guess.

My point is that every province has their own "slightly" unique version. Of course, they'll be biased as to which versions are better. Only the people who don't cook always benefit.

I've been to a lot of provinces and the Pampangueñas are the best cooks.

Pampangueños may have a say on that ... never seen one who don't know how to cook, specially for pulutan ... lol

My mom is kapampangan and she cooks great! Pero pag dating sa lechon, Tacloban lechon is the best! forget the sauce!

I dunno where Tacloban is, but I keep hearing about Bulacan being the kings of Lechon.

I love their tagalog accent too....they sound so sweet and so malambing as they tell you "Papatayin kita!" :)

It's in Leyte, Eastern Visayas. Bulacan is more popular for their sweets and coco vinegar.

Oh yeah....their (Bulacan) pastillas are famous. I think it's the chicharon from bulacan that got me confused about lechon.

yung adobo ko pagkaluto tinatanggal ko sabaw sandali tapos sinasangkutsa(?) para magbrown yung meat then binabalik ko yung konting sabaw.

mas gusto ko longganisa ng vigan/lucban kesa pampangga, pero paborito ko tocino nila hehe

You should try longaniza from Cabanatuan, they are not the sweet type and they have lots of garlic on it.

In Pampanga, what I like best is kamaro, I don't know if you guys have tasted it but I'm telling you guys, you should try it. It's delicious.

Ang tawag dyan ay kamaru, sa tagalog ay ararawan, sa bukid nahuhuli ang mga yan, pag binubungkal ang palayan. Medyo may kamahalan na ngayon dahil delicacy na rin maituturing yan.
